I recently received some POM Wonderful juice to try, not only as a refreshing beverage, but to use in recipes as well!
Not only does it taste great, it has many health benefits…
POM Wonderful 100% Pomegranate Juice and POMx are full of antioxidants called phytochemicals. Polyphenols are an important class of phytochemical. And tannins, particularly punicalagin, anthocyanins and ellagic acid are all members of the polyphenol family.
While many fruits contain some of these antioxidants, pomegranates have large amounts of all three. POM Wonderful 100% Pomegranate Juice contains a great deal of these vital elements because of the way they press their fruit. Immediately upon harvest, they take their fruit to their specially designed presses, which are similar to those used to press champagne grapes. These presses allow them to extract antioxidants and polyphenols from the inedible portion of the fruit, as well as the arils.
This chart shows the total amount of polyphenols, ounce per ounce, in each of these beverages. Once again, POM stands out as the true Antioxidant Superpower.
So far, 47 total studies, including 14 clinical studies, have been published in peer-reviewed journals. Primary research areas have included prostate, cardiovascular, and erectile function as well as antioxidant composition and safety/bioavailability.
By drinking POM, you are reducing LDL cholesterol, which helps improve blood flow and artery stress. Their study with 13 healthy male volunteers who drank POM Wonderful 100% Pomegranate Juice for 2 weeks, (found) the amount of LDL cholesterol oxidation decreased by 20% and antioxidant activity in the blood increased by 9%.
The first recipe I tried was the
POM Honey Vinaigrette
juice from 2-3 POM Wonderful Pomegranates* or 1 cup POM Wonderful 100% Pomegranate Juice
4 tablespoons red wine vinegar
4 tablespoons honey
4 teaspoons Dijon mustard
4 teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme
1 teaspoon fresh tarragon or 1/2 teaspoon dried tarragon
Directions:
1. Prepare fresh pomegranate juice.*
2. Mix in a blender or shake all dressing ingredients in an air-tight container until well blended.
3. Serve with POM Roasted Vegetable Salad.
This is Scrumptious and so easy! I luv my salads, and this dressing would also be a great addition to just a plain lettuce salad, if you wanted something super simple for lunch. It has that lil’ zing that I like without being overbearing.
I also wanted to serve something that included the POM Wonderful for dinner for the family, and since we all like pork, I decided to try the
Pork Tenderloin with Pomegranate and Onion Marmalade
Ingredients:
Tenderloins
* juice from 2-3 large POM Wonderful pomegranates* or 1 cup POM Wonderful 100% Pomegranate Juice
* 2 1-lb. pork tenderloins
* 1 teaspoon salt
* 1 teaspoon ground black pepper
* 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
* 1 tablespoon dried rosemary (or 3 tablespoons fresh rosemary)
* 1 pound prosciutto, sliced thin, plus string to tie to tenderloins
* 1 tablespoon olive oil
* 1 cup chicken broth
Marmalade
* 1 cup arils from 1 or 2 large POM Wonderful pomegranates
* 1 12-oz bag frozen whole petite onions, thawed**
* 1 cup water
* 1 tablespoons olive oil
* 1 teaspoons salt
* 4 tablespoons honey
* 2 tablespoons white wine vinegar or lemon juice, with the lemon zest
Tenderloins:
* Preheat oven to 375 F.
* Prepare fresh pomegranate juice.*
* Rub each tenderloin with salt, pepper, thyme and rosemary.
* Wrap each tenderloin with prosciutto and tie at intervals with string.
* Over medium-high heat on the cooktop, brown tenderloins in an ovenproof skillet. Reduce heat to low; add chicken broth and pomegranate juice.
* Cover and bake until pork is done or meat thermometer inserted in center is 165 F, about 25 to 30 minutes.
* Prepare marmalade while tenderloins are baking.
* Remove string and slice each tenderloin.
Marmalade:
* Score 1 or 2 fresh pomegranates and place in a bowl of water. Break open the pomegranates under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1 cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.)
* Heat a skillet over medium-high heat; add water and thawed onions.
* Reduce heat to low and cook until soft, about 15 to 20 minutes.
* Add salt, honey and white wine vinegar (or lemon juice and lemon zest).
* Cook until onions are glazed and sauce is thickened. Stir in arils and serve hot with pork.
This is very delicious! However, the prep time was a bit more than I like. In my opinion, this recipe would be best to prepare over a weekend, when you’re not so rushed. The girl’s even enjoyed the pork tenderloin! I was hesitant to whether they would go for this or not.
Now, for the dessert! We can’t pass this one by! I’m in the Valentine’s mode, and this is perfect!
Velvet Cupcakes with POM Cream Cheese Frosting
Ingredients:
POM Cream Cheese Frosting
* juice from 3-4 large POM Wonderful Pomegranates,* or 1-1/2 cups POM Wonderful 100% Pomegranate Juice
* 1 cup arils from 1-2 large POM Wonderful Pomegranates
* 4 oz. soft unsalted butter
* 8 oz. cream cheese, at room temperature
* 14 oz. powdered sugar
POM Velvet Cupcakes
* juice from 6-9 large POM Wonderful Pomegranates,* or 2-1/2 cups POM Wonderful 100% Pomegranate Juice
* 16 oz. granulated sugar
* 14 oz. soft unsalted butter
* 4 ea large eggs
* 1-1/2 cups buttermilk
* 2 tablespoons white vinegar
* 2 teaspoons vanilla extract
* 15 oz. all-purpose flour
* 1-1/2 oz. cocoa powder
* 3/4 oz. baking soda
* pinch salt
* 1/4 cup heavy cream
Preparation:
POM Cream Cheese Frosting:
Prepare fresh pomegranate juice*, score 1-2 fresh pomegranates and place in a bowl of water, break open the pomegranates under water to free the arils (seed sacs), the arils will sink to the bottom of the bowl and the membrane will float to the top, sieve and put the arils in a separate bowl. Reserve 1 cup of the arils from fruit and set aside, (refrigerate or freeze remaining arils for another use), reduce the pomegranate juice, over low heat, down to 3 fl. oz., Allow to cool, place butter into electric mixer bowl with paddle attachment and cream on medium-high speed for 1 minute, add the cream cheese and continue to mix for 2 more minutes, turn the speed down to low and slowly add in the powdered sugar and the pomegranate juice reduction, mix until the sugar is fully combined, remove icing from the mixer and place into a piping bag with a round or star tip.
POM Velvet Cupcakes:
Preheat oven to 350F, reduce the pomegranate juice, over low heat, down to 1/2 cup, place sugar and soft butter in the bowl of an electric mixer with the paddle attachment, cream on medium-high speed, until the mixture is pale yellow and fluffy, turn the speed down to low and add the eggs in one at a time, in a separate bowl, combine the buttermilk, pomegranate juice reduction, white vinegar and vanilla extract, and then slowly add half of this to the mixer, combine the flour, cocoa powder, baking soda and salt, and then sift at least two times until well mixed, add half of this to the mixer, add the remaining half of the liquids to the mixer, and then the remaining dry ingredients, finish off with the heavy cream, beat just until combined, place cupcake liners into cupcake pan, and using a spoon, fill with cake batter until it is just about 3/4 full, bake for 20 to 25 minutes, or until a toothpick inserted in the middle comes out clean, allow the pan to cool slightly, and then remove cupcakes to a wire rack to cool fully, once the cupcakes are cooled completely, they can be iced with the pomegranate cream cheese frosting and topped with fresh pomegranate arils.
OMG! These melt in your mouth! Well worth the time to make these from scratch!! Did I stop at just one? Ummm.. No!
